Katori chat(chat in the shape of a Bowl)
This is the KING of all Chats.. I mean this is my personal favourite. This is the most tasty and unique recipe. Chat is a spicy street food that originated in india served as hors d'oeuvre or starter and is popular across the indian sub continent in india, Pakistan, Nepal and Bangladesh.
Ingredients you'll be needing:
- Maida(All purpose flour) 1/2 kg
- Radish(optional) 2-3pcs
- Tomato 2-3pcs
- Coriander 2-3 roots
- Green chillies 2-3pcs (based on how much spice you can handle)
- Carrots 1 pcs
- Onion 1 pcs
- Oil for frying(optional you can always choose to bake over frying)
- Samal fennel OR mangraila/ kalaunji 1 teaspoon
- Carom seeds 1 teaspoon
- Salt According to taste
- Chickpeas 300 gms
- cumin seeds 1 teaspoon
- Bay leaf 2 leaves
- Turmeric powder 1 teaspoon
- chili powder 1 teaspoon
- garam masala 1 teaspoon
- coriender powder 1 teaspoon
- Ginger garlic paste 2 teaspoon
- soth chutney 2-3 teaspoon
- green chutney 2-3 teaspoon
- Sev 2 cups
Let's get started:
Preparing the chat bowls/basket's dough:
- Take maida in a big open pan.
- Add Samal fennel OR mangraila/ kalaunji,Carom seeds ,salt,1 cup oil or ghee(I would recommend using Ghee because, like any clarified butter, ghee is composed almost entirely of fat, 62% of which consists of saturated fats, which are good for health.)
- Now mix all the ingredients without adding water.
- Now add water and knead the dough.
- Set it aside for 1-2 hours.
Making chole (chickpeas):
- Dunk 300 gms chickpeas overnight.
- Boil dunked chickpeas in a pressure cooker for 2-4 whistles.
- Cut onion,tomato,chili ,coriander leaves in small pieces.
- Now take a pan add oil in it and let it heat.
- Now add bay leaf, cumin seeds, and onion in the slightly hot oil, and cook it for some time or till the onion is golden.
- now add the chili powder, coriander powder and ginger garlic paste in it and cook till oil separates
- Add tomatoes(adjust quantity of tomatoes according to your taste, I added 2),cook another 5-7 minutes and add water.
- Mash the boiled chickpeas and add it to the prepared masala.
- Let it boil for another 10 minutes and your chole is ready.
Making the chat bowls/baskets:
Making the chat bowls/baskets is a little tricky job to do. WARNING ! these should be made under parental guidance and done with real caution to prevent yourself from burning.
- Take 2-3 small bowls.
- Make small roundels and roll the dough with a rolling pin.
- Now stick the rolled dough on the back side of the bowls.
- Heat oil in a pan and slowly put the bowls in the oil.
- Let the dough to turn a little brown then carefully separate the bowl from the basket.
- Now turn it over and let it fry on the other side also.
- Take the fried baskets out with the help of a spatula.
- OR you can skip the 4th step and bake it instead of frying.
Serving the Katori Chat:
- Take one karori/basket pour some chole into it.
- Now sprinkle finely minced onion, tomato, radish and some sev into it.
- Garnish with fresh coriander, green chili soth chutney, green chutney and fresh lime juice.
All these flavours when combined creates an awesome, savoury flavour which is hard to resist and is worth all the hassle. I will post the soth and green chutney recipes in my next post. Till then take care and stay healthy..ππ
